Last Saturday, I was in the kitchen like I always am, and noticed the basket in the middle of the dining table filled with apples. I could be the only one, but apples are not  most my favorite fruit, and they are the untouched fruit in the house. However, I love baking with apples. Catch where I am going here, dessert time! Today's post is a recipe on how I used those apples that were sitting in the basket unloved. Also, since we are heading into Thanksgiving month, I thought these cupcakes are perfect to serve during the holiday or anytime really. However, it is nice to slap a label on it, Thanksgiving Cupcakes?? That has a nice ring to it, right?! lol

Imagine cinnamon, nutmeg, baked apples, cream cheese cinnamon frosting all in a cupcake. You see, totally Thanksgiving Cupcakes! 

Also, I am going to give myself a pat on the back because today's recipe is the last of this week's dessert packed goodness on the blog. It was fun, but next week, I am thinking of healthy snack/meals week? If you have any ideas for next week's recipes, please share in the comments! 

Let us get into how to make these Delisouse Cinnamon Apple Cupcakes.

Apple Cinnamon CupCakes

Ingredients: 
Cinnamon Apple Cupcakes

- 1 and 2/3 cup of flour 
- 3/4 cup of sugar 
- 1 egg
- 3/4 cup milk 
- half teaspoon nutmeg 
- Tablespoon of cinnamon 
- Cup of chopped apples 
- a teaspoon of baking powder 
- 1/4 teaspoon of baking soda 
- tablespoon of plain yogurt or 1 /4 cup vegetable oil (optional, adds extra moisture to the cupcakes)

Instructions: Preheat Oven 350 F 

- In a medium bowl, whisk egg, sugar, cinnamon, and nutmeg until smooth and creamy texture.
- Next, add milk and yogurt or vegetable oil and mix well.
- Then add the flour in two portions and mix until smooth. Add the baking powder, baking soda, and melted butter. Mix with an electric mixer on medium speed until mixture is smooth.
- Add the apples and mix with a spoon until the apples are incorporated into the mixture.
- Place cupcake papers in a cupcake pan or grease each cup so that they will not stick. Use a large spoon or an ice cream scooper and place two full spoons in each cup.
- Then place in the oven, bake for 19 - 22 minutes. Keep an eye on it. While it is baking, time to make the cinnamon frosting.

Your house will smell YUMMY!

Cinnamon Cream Cheese Frosting
- 4 oz. Packet of cream cheese
- 1 cup of powdered sugar ( Tailor the sugar content to your liking, I do not like it that sweet)
- One stick of unsalted butter
- Tablespoon of cinnamon and 1/4 teaspoon of nutmeg.

Instructions:
Mix everything with an electric mixer until smooth. That is it! You can also thinly slice apples and place it over the frosting as garnish. Oh, and last one sprinkle some cinnamon! Now, we are DONE!

I am the biggest coffee drinker, and I'm sure many of you guys can relate, the obsession is real. But of course, I do moderate my obsession and make sure I do not exceed more than two cups a day.  Since I cannot drink as many cups as my heart desires, I incorporate it in baking! Tiramisu, crumble coffee cake, mocha pudding, and coffee ice cream. Yup, the obsession is very real. I create my desserts and drinks using the International Delight Iced Coffee. A couple weeks ago I hosted a brunch, and picked up the International Delight Caramel Macchiato Iced Coffee. I made caramel macchiato frappuccinos and served it to my friends and family and let me just tell you, it was a success. Any coffee lover will appreciate the coffeehouse taste without the coffeehouse hassle.  Since the weather is getting cooler, I incorporate the iced coffee drinks in my desserts. For today's recipe, I made a delicious Mocha Caramel Pound Cake. YUM! I made these yesterday and woke up today with only one slice left. My family devoured these scrumptious mocha caramel goodness. This pound cake gets the mocha flavor from the International Delight Mocha Iced Coffee Light. There are also other flavors such as Vanilla and Caramel Macchiato, which you can get at your local Walmart in the refrigerated tea/juice section. Mocha Carmel Pound Cake 
Ingredients:

- 3 Eggs
- 1 1/2 cups Flour
- 1/4 cup Vegetable Oil
- 3/4 cup of Sugar ( 1 cup of sugar if you want it sweeter)
- 1/2 cup International Delight Mocha Iced Coffee Light
- Table Spoon Instant Coffee
- Teaspoon Baking Powder
- 1/4  Teaspoon Baking Soda
- 4 Tablespoons of Caramel
- Tablespoon of plain yogurt (optional)

Instructions
Preheat Oven 350 F

- In a bowl, whisk the eggs and sugar until you get a creamy light pale yellow color. Then add the mocha iced coffee and tablespoon of instant coffee. 

- Then add the flour and mix. 

- Next, add the baking powder, baking soda, vegetable oil, and mix with an electric mixer on medium speed or with a whisker until smooth. 

- In a pound cake pan, put parchment paper at the bottom to avoid the cake sticking.

- Pour the cake mixture into the pan. Then add one tablespoon at a time of caramel, then with a fork mix it gently. Do not over mix, we want it to have caramel swirls on the cake. Now you can make caramel at home or purchase it ready. If you want to make it at home, purchase condensed milk and boil it for a couple of hours in a pot with water covering half the can. That is it, really easy to make caramel at home. 

- After you added the caramel, place the pan in the oven and bake for 35 to 40 minutes. Place a toothpick in the middle of the cake to see whether it is fully cooked. You do not want to over bake it.

- After it is baked, let it cool for ten minutes. Then add chocolate ganache over it and powdered sugar. That is it! Slice a piece and enjoy this super delicious Mocha Caramel Pound Cake. An easy recipe that incorporates fridge friendly and ready-to-drink iced coffees!

Today's post is a recipe on how to make these delicious Coconut Macaroons with Semi-Sweet Chocolate. Before the macaroon cookies became very popular, I remember my mother always buying coconut macaroons when I was child. However,  I never really liked them. Since then, my taste buds have changed, and these macaroons are  absolutely amazing, healthier option, and perfect for those who love coconut. These coconut macaroons are toasted beautifully from the outside and soft and chewy in the inside. Perfect!  Also, if you are a fan of the bounty chocolate, this tastes similar to that. Okay, let us get into how to make these scrumptious coconut treats. 


Coconut Macaroons recipe

Ingredients: 

- 2 Egg Whites 
- 2 tablespoons of Coconut Oil 
- 1 Bag of Coconut Sweetened  or unsweetned 
- Pinch of salt 
- 1 tablespoon of water 
- teaspoon of sugar (optional)


Instructions:  Preheat Oven 330 F

- In a bowl, whisk the 2 egg whites until thick and foamy. This took me at least 5 minutes to achieve a perfect consistency.

- In a sperate bowl, mix coconut shreds, salt, water, and water and coconut oil. 

- Fold in the coconut mixture into the egg whites. Do not over fold. 

- On a baking sheet, with a spoon scoop medium sized coconut mixture onto the pan. Keep some space between each macaroon. 

-Bake the macaroons for 20- 25 minutes. 

- When they are finished baking, spread semi-sweet chocolate ganache over each macaroon. 

That is it!  Super delicious and simple to make!

I love donuts!! However, I do not eat them as frequently as I wish I can. I never realized how packed with sugar and oily they are, until I recently ate one from Krispy Kreme. It was one random Monday morning; I was at Starbucks getting some work done, and I looked out the window, and there it was a Krispy Kream store and just like that, cravings kicked in. Since I had not eaten one in almost year, it was one of my healthy lifestyle changes that I would reduce eating sugary desserts and replace it with homemade ones if I were craving them. That Monday, I gave myself the okay to pick up ONE chocolate glazed donut from Krispy Kreme. I did exactly that, and I was so excited that I parked my car in the parking lot just to devour it. Took that one bite and it was everything; I did not want. It was very sweet, an uncomfortable sweet. It was oily and sugary and not enjoyable AT ALL! Now, let me just tell you. A year ago, I would be eating three of them and loving every bite. However, that is the amazing progress that one can achieve, when you adopt healthier lifestyle changes and for me, it was consuming more natural sugars from fruits and reducing the consumption of unnecessary processed sugar. 


Therefore, I was adamant to find an alternative to making a donut that was low on sugar, not fried, not a cake donut but a recipe that actually tastes like a real fried donut minus the triple dose of sugar and oil that accompanies a traditional donut. So, HERE it is. I tried many recipes, and for some reason none of them worked out, they turned into bread. There can be many factors to why those did not work. Due to that, I played around with the ingredients, until I settled on this one. I tried this recipe without the egg yolks and found that adding it, gives a better consistency. So, enough rambling from me, as you can tell I am excited. Let us get into how to make these amazing baked donuts with ingredents found in every kitchen pantry.

Ingredients

-   2 cups of flour 
-  1/4 cups sugar 
-  3 tablespoons of butter 
-  2 egg yolks 
-  Teaspoon of Vanilla Extract 
-  2/3 cup of warm milk 
-  1 Tablespoon yeast 



Instructions 

Step One: 
- Place a tablespoon of yeast in the warm milk and add a teaspoon sugar. Mix it and let it sit for about 3 minutes. 
- In a bowl, add 1 and 1/2 cup of flour, salt, and sugar. Mix well. 
- Add the 2 egg yolks, 2 table spoons of melted butter,  and milk into the dry ingredients. Mix with a spoon a couple of times. 
- With an electric mix, on medium speed, mix the ingredients for about 5 minutes until smooth. 
- If the batter is sticky, begin adding the 1/2 cup of flour into the bowl and mix the ingredients for another 2 minutes.

Step Two: 
- Transfer the dough onto a floured clean surface. 
- Do not worry if the dough is still sticky. Have 1/4 cup of flour right by you, and knead the dough on the surface and slowly incorporate some of the flour as needed. Now, if you do not know what kneading is. It is just folding dough many times until it is smooth and has a bouncy texture. I knead about 40-55 folds. I fold and add flour if it's sticky. - To find out whether you are done kneading the dough, poke the middle of the dough and if it bounces back, then you are good to go. 


Step Three:  
- In a large bowl, add vegetable oil or any flavorless oil and coat the bowl. Place the dough in the middle of the bowl and cover it with a towel or plate and place in a warm spot for 40 minutes to 1 hour. Do not rush this step, it is very important to let the dough rise in a warm spot for at least 40 minutes.

Step Four: 
- After 40 minutes to 1 hour, remove the dough from the bowl and place it on a floured clean surface. With a rolling pin, roll the dough to half an inch in thickness. 

- With a round cooking cutter, cut trough the dough and between every cut place the cookie cutter in the flour. I made 6 no hole donuts and 4 donuts with holes in the middle. I use the end of a piping pin, or you can use another smaller cooking cutter to achieve that. Any leftover dough, I used it to make small donut holes.

- On a baking sheet with parchment paper, place all the donuts and cover it with a towel and place it in a warm place for 40 minutes to let it rise.

- After about 30 minutes,  preheat the oven to 375 F 
- After 40 minutes, you will notice the donuts are larger in size. 
- Place the tray in the oven and bake for just 10 minutes. 


While the donuts are baking, this is the time to assemble the glazes and toppings. 



Cinnamon Sugar

- Brush melted butter all over the baked donut with a hole in the middle.  In a bag, add sugar and cinnamon. Place the donut in the bag and shake it until it is coated entirely with the cinnamon-sugar mixture. Since it is fall, you can also coat it with a pumpkin spice mixture and dip the donuts in melted chocolate. YUM!

Strawberry Jam Filled Donut

- This one is hands down, my favorite. It came out tasting so good. With a popsicle stick or toothpick, make a hole in the sides of the closed donut. In a piping bag, place strawberry jam or any jam and fill the donut where we made the hole.  Brush melted butter all over the donut and coat it with powdered sugar or granulated sugar.

Boston Cream Donut 

- Custard filling and chocolate ganache, it does not get better than that! 
- You can find the custard recipe, here. Just like we did for the strawberry jam filling, poke a hole in the side of the donut and fill it with the custard. 
- Dip the top of the donut in melted semi-sweet chocolate ganache.

That is it! Time-consuming, maybe, but totally worth it! Homemade anything, is ten times better than anything store bought! You will be every surprised at how delicious these taste compared to a traditional fried donut.

Spicy Shrimp Curry

Today's post is on how to make Spicy Shrimp Curry with basmati rice. I love making curry because it is a very delicious, rich and a hearty meal bursting with flavors. Personally, I like spicy food and if your are not a fan like I'am; then feel free to omit the chili powder and jalapeno. This curry has vegetables and shrimp in it, and you can also add meat or chicken if that is something you prefer. I serve this spicy shrimp curry with basmati rice and warm pita bread for dipping. The best part is that it easy to make and so delicious. 

Let us begin...



Ingredients: Spicy Shrimp Curry 

- Can of Coconut Milk 
- 1 tspTomato Paste
- 2 tsp curry powder 
- 1/2 tsp cumin seeds 
- 1/4 ginger powder 
- 1/4 garlic powder 
- 1/4 tsp of cayenne 
- 1 tomato 
- 2 potatoes 
- 1 cups broccoli 
- 1 onion 
- 2 minced fresh garlic 
- 1 tablespoon of fresh parsley 
- 1 cup of cauliflower 
- 1 cup of shrimp 

Instructions: Spicy Shrimp Curry Cooking Time- 40 minutes 

- In a large sauce, cook the onions in some olive oil. 

- Then add all the spices; garlic powder, ginger powder, cayenne powder, curry powder, and cumin  seeds. 

- Then add the fresh minced garlic, chopped tomato, coconut milk, and tomato paste. 

- Add the chopped potatoes and let it cook on medium to low heat until soft. 

-  Then add the shrimp, broccoli, cauliflower, chopped jalapenos and fresh parsley. 

- Keep an eye out on the shrimp, you do not want it to overcook and ends up with a rubber texture. 


Ingredients: Basmati Rice

- 1 cup of Basmati rice
- Half an onion chopped 
- Caraway seeds 



Instructions:  Basmati Rice Cooking Time- About 30 minutes 

- Wash the rice thoroughly 

- Then Soak the rice in warm water for 30 minutes 

- After the rice has soaked, in a medium pot add 2 tablespoons of olive oil and onions. Let the onions cook for 1 minute on medium heat before adding the rice. 

- Drain the rice, and then pour it into the pot and add water until it covers the rice Also, add teaspoon of caraway seeds. 

- Cover the rice and let it cook on low heat without stirring it. If you feel that you need to add water 
later on, you can. But be careful not to add too much, because you want the rice to be fluffy and not wet and soggy. 

That is it! 
Serve the rice on the side with the spicy shrimp curry and enjoy!
