Creamy Spicy Carrot Soup

HAPPY SUNDAY

I am a total soup lover. Whenever I am tired or in a rush but really want to make something homemade and fresh, I make soup. Soups are probably the easiest thing to whip up. Today's recipe has to be one my recent favorite to make, creamy spicy carrot soup. For the longest time, I kept associating carrot soup or mashed carrot to baby food. Not in any way implying that baby food is bad but you know just bland and lack of flavor. So today's carrot soup is going to change everything for you because this soup is full of rich flavor and is contains those fall flavors: Cinnamon + Nutmeg 


Here is what you will need to make this: 

- 1 cup and half of freshly chopped  carrots ( try to avoid any frozen carrots ) 
- 1 medium chopped onions 
- 1/3 cup of red lentils ( optional, but this will add protein to the soup and thicken it) 
- Salt
- Pepper 
- 3 gloves of chopped gralic 
- Pinch of nutmeng
- Ground Cinnamon or half a cinnamon stick 
- 1 tablespoon of olive oil
- half a jalapeno or cayenne powder 
- Water 



Instructions: 

- In a medium size pot add olive oil and add chopped onions. Set aside 1 tablespoon of chopped onions for garnish later. Stir the onions on medium heat until golden brown. 

- Once the onions are golden, add the chopped carrots and add water just covering the carrots. Allow carrots to cook on low to medium heat. Once water begins to boil and the lentils and half a chopped jalapeno, three cloves of chopped garlic, cinnamon stick and a pinch of nutmeg. 


Creamy Spicy Carrot Soup

- Cover the pot and let the carrots and lentils cook. Once the soup thickens, add dried herbs, salt, and pepper to taste. Add paprika and dried veggie seasoning ( optional I picked this spice from Istanbul, Turkey). Once soup thickened and carrots and lentils are cooked, let it cool slightly before pouring into a blender. 

- Pour the soup into a blender and blend until creamy and lump free, you might need to blend in portions to get it the soup creamy. 

- Pour the soup back in the pot and on low heat add some water depending on how thick the soup is and add salt/pepper for taste. Let the soup simmer on low heat for about 10 min.

- Once the soup is ready, pour onto a plate and add caramelized onions and yogurt or coconut yogurt (vegan). I paired my soup with grilled whole wheat tortilla for dipping. 



That is it, super easy and full of flavor soup. Enjoy!

Grain Salad Stuffed Pastry Shells

A very happy late 4th of July to my fellow Americans. My 4th of July weekend was all about relaxing and of course, a lot of food. Today's post, I want to share with you a quick, healthy and delicious summer party appetizers and quick refreshing snack ideas. For your next summer barbecue party, make these simple, elegant looking, Grain Salad stuffed pastry shells. These appetizers take less than 30 minutes to make. You can assemble everything the day before a just stuff them in the pastry shells the day of the party. A great perfect bite-sized party snack that is filling and bursting with flavors. 

Here is what you will need to make these: 

- Chick Peas 
- Half chopped red onions 
- half cup of sweet corn 
- 1 chopped tomatoes 





Instructions: 

Follow the instructions on the Suddenly grain salad box. Once you cooked the rice mixture, mix in the red onions, sweet corn, tomatoes and the vinaigrette packet in the box or you can just make your own by mixing salt, pepper, lemon juice, and olive oil. Mix all the ingredients and set aside. I picked up the premade fillo pastry shells from the freezer section at my local grocery store. I baked the shells for less than 10 minutes or until golden brown. I stuffed the shells with the grain salad and that is it. super easy, delicious and a refreshing appetizer. You take a bite and you get a crisp from the shells and a soft filling from the grain salad. 



Any leftovers from the grain salad you can place it in a mason jar and add chick please and other extra topping and place in the fridge and snack on it or bring to  work. Just a great easy, healthy and yummy meal/option.

Fruit Tart made with Cheerios Crust

Breakfast is an essential meal to fuel up before the start of your day. I have mentioned more times than I can keep count, that mornings are busy for me. So smoothies, oatmeals, parfaits, and cereals are my top picks. Anything quick and delicious I will reach for.   I am sure everyone can relate to me when I say that cereal is a classic breakfast choice. In my house, there is always a box cherries, whether it is a box of multigrain cheerios, apple cinnamon cheerios, chocolate cheerios or honey nut cheerios. A bowl of cheerios with almond milk and fresh fruit is great for breakfast, mid-day snack, post workout snack or just because. If you are gluten intolerant, I have got some good news. Cheerios is so versatile, you can make a trail mix, no-bake bars, muddy buddies, crumbles, and no-bake crusts. Yes, all those can be made with cereal. Since its summer, I wanted to share a quick dessert: A Fruit Tart made with no bake cheerios crust. This dessert is perfect to serve at a pool party, barbecue gathering, brunch or for any occasion really. 

No Bake Fruit Tart


Custard: 
- 2 cups of Almond Milk ( you can use milk, coconut milk, or greek yogurt in the place of custard)
- 1/3 cup of sugar
- 3 egg yolks ( optional if you are vegan) 
- 1/3 cup of corn starch)
- half teaspoon of pure vanilla extract 

Instructions: 
In a saucepan, whisk all the ingredients together until lump-free. Then on medium heat stir the mixture with a wooden spoon constantly. Stir for 4-5 min or until the mixture thickens. Once thickened, pour in a late and cover it with wax paper and place in the fridge to set. 


Cheerios Crust: Preheat Oven 350 F

- 4 cups of multigrain cheerios or honey nut cheerios.
- 3/4 cup of brown sugar
-Half teaspoon of cinnamon
- 3/4 cup of melted butter( you can use coconut oil


No Bake Fruit Tart

Instructions:
- In a blender or food processor, place the cheerios and mix/pulse until finely crushed.
- In a bowl, add the melted butter, cinnamon, and sugar and mix well.
-  Place the mixture in a tart pan of your choice.
- Place the crust in the oven to bake for  6-9 min.
- Let the crust cool completely before topping with custard and fruits.

I am a big snacker, so eating healthy is essential.  The biggest change that I did to help combat urges to munch on not so good food, is to eat breakfast. Such a simple change but a very effective one. Whipping up a quick fruit packed protein smoothie or a parfait really gives me that energy to start my day off right. I head out to work early so parfait has been my everyday choice. It is no fuss, I just grab a yogurt and add homemade granola and fresh fruits in the container. This method is great for anyone on the go because once finished, you can easily dispose of the cup.   Today's recipe, I am sharing a quick smoothie great for breakfast, post workout or a mid-day snack. The star of the smoothies is Annie's Organic Whole Milk yogurt .

Today's recipe I am sharing an easy fruit packed berry goodness smoothie. Here is what you will need to make this:

- Frozen Berries
- Fresh Strawberries
- 1 Banana
- Tablespoon of Chia seeds
- Cup of Almond Milk
- Two Tablespoons of Old Fashioned Oat
- 1 tablespoon of Vanilla Protein Powder
- 3 tablespoons of Annie's Organic Whole Milk Berry patch yogurt


Instructions: 
In a blender, add all the ingredients and blend until creamy smooth. Pour the smoothie in a cup and sprinkle chia seeds, coconut flakes, nuts or fresh berries and enjoy.
