Herb Shrimp Salad

First, I would like to address my absence from the blog. I have not been consistent but I am happy to let Y'all know that I am back. So the schedule will change to 2 posts a week. Since I am busier than ever, I'll be sharing some posts catered around healthy quick work lunches and snacks. Also, tips on staying fit on a busy schedule. Since I am on the topic of a healthy lifestyle, honestly, I have struggled the past two months with eating healthy and staying fit. The biggest struggle is the lack of desire to actually get out and run or to put down that bag of potato chips. To address these issues, the past couple of weeks, I have been trying to get to the root of what is holding me back.  I am not there yet, but, I do feel that I am on the right track. So today's post is a quick recipe of a recent lunch that I made with my sister: Herb Shrimp Salad. A super delicious, easy, and good for you dish. 

Here is what you will need to make this, 

Ingredients: 

- Half a pound of shrimp 
- 2 cups of mixed greens: Spinach, Kale, Arugula, Lettuce 
- Half cup of shredded carrots 
-  Cup of broccoli 
- 2 minced garlic 
-  Spoon of chopped parsley and basil 
- Seasoning: Salt, Pepper, Garlic Powder, Cayenne pepper, dried herbs 
- Half a lemon
- 4 Tablespoons of olive oil 


Instructions: 

- Clean the shrimp and devein them. 
- In a bowl add the oil, lemon juice, salt, black pepper, dried herbs, garlic powder, minced garlic, cayenne, parsley, and basil. 
- Mix all the ingredients togeather well. 
- Add the cleaned shrimp to the bowl and coat the shrimp with the mixture. 
- Let the shrimp marinate for at least 10 to 15 min depending on how much time you have. 



- Pour the shrimp into a pan on medium heat. Then add the broccoli and drizzle some olive oil and stir.
- Let the shrimp and broccoli cook on medium heat stirring occasionally for 8-10 minutes or until the shrimp looks fully cooked. Be careful not to overcook the shrimp.

-Then add a handful of spinach and stir a couple of times, then remove from heat and transfer to a plate that has mixed greens. You can make a quick vinegarette and dress the salad or just use the leftover juice from the pan as a dressing.

- Add the shredded carrots over the salad and sprinkle some black pepper.

- Serve and enjoy this delicious, filling and easy to make Herb Shrimp Salad.

I am a big fan of applesauce. Growing up, it was one of my favorite snacks to have. Now, I love using applesauce in baking. It is a great substitute for eggs or oil in a dessert recipe. If I want to create a dessert that calls for oil, I love to replace it with applesauce and that helps to reduce the calories. Half a cup Mott's® Natural Applesauce or Mott's® Granny Smith Applesauce is 50 calories. Half a cup of vegetable oil is 960 calories. Let us get into how to make this delicious and easy to make Apple Upside Down Cake.

Ingredients:

Caramel Topping:
-3 Apples Peeled and Sliced
-Brown Sugar
-Unsalted Butter
-Cinnamon

Cake:
- 1 cup of flour
- 1 cup of Mott's® Healthy Harvest Granny Smith Applesauce
- 1/2 cup of granulated sugar
- 1 teaspoon of baking powder
-1 teaspoon of baking soda
- 2 eggs
-1/2 cup of butter (8 tablespoons)
- Vanilla extract
- Pinch of salt

Instructions:
Caramel Topping:
- In a small Saucepan on medium heat add the butter, cinnamon, and brown sugar. Stir until the mixture begins boiling.
- Pour the mixture into a prepared cake pan and spread it evenly.
-Then add the sliced apples on top of it.

Preheat Oven 350° F

Cake:
- In a Bowl, whisk sugar, butter, and vanilla extract until mixture is smooth.
- Using an electric mixture, add one egg at a time.
- Then add the cup of applesauce.
- In a separate bowl, mix the dry ingredients: flour, baking powder, and baking soda.
- Mix the dry ingredients into the wet ingredients.
- Pour the mixture on top of the apples and spread evenly.
- Bake at 350° F for 30 to 35 minutes or until you insert a toothpick and it comes out cleans.
Remove from the oven and let cool for 5 minutes before inverting onto a large plate.  

Slice a piece and enjoy this super delicious Apple Upside down cake using the Mott's® Healthy Harvest Granny Smith Applesauce.

Granola Energy Bites & Granola Breakfast Tarts

 I am a big snacker. Eating three meals a day does not work for me.  When I am at work, I get tired and feel that I need to snack several times a day so that I can fuel up. After a good run, I snack on something quick and delicious.  My favorite quick snack to whip up early mornings are yogurt Granola parfait or granola cereal with almond milk and fresh fruits. I can pretty much eat granola with everything. I have it for breakfast, lunch on a salad to give a nice crunch, and for dessert with fresh berries. The Quaker Real Medleys SuperGrains Granola is my favorite because it is packed with so much goodness. These granolas I picked up from Walmart and they contain seven super grains and seeds, like Whole Grain Wheat, Flaxseed, Red Quinoa, Sunflower Seeds, Amaranth and Barley. Since I am big fan of granola, I will be sharing two easy recipes using The Quaker Real Medleys SuperGrains Granola:  No-Bake Granola Energy bites  and a Granola Breakfast Tart with berries.




No Bake Granola Energy Bites: 

Ingredients: 

- 6 pitted dates
- half teaspoon of cinnamon
- tablespoon of cocoa powder 
- 3 tablespoons of peanut butter 
- half cup of Quaker® Real Medleys SuperGrains Cinnamon Apple Walnut
- 1 tablespoon of coconut oil 
- 2 tablespoons of honey 

Instructions: 

- In a food processor, add all the ingredients and pulse until mixture is smooth and pasty like. Of course, you can add any additional. ingredients like nuts dried fruit to the mixture. 
- Scoop the mixture into your hands and make small balls. 
- Coat the balls in melted chocolate and coat with coconut shreds or nuts. 











Granola Breakfast Tart with Fresh Berries: 

Ingredients: 
- 1 Cup of Quaker® Real Medleys SuperGrains Blueberry Pecan
- 3 tablespoons coconut oil 
- Plain Yogurt 
- Honey 
- half cup of fresh blueberries 


Instructions: 
- In a food processor, add the Quaker® Real Medleys SuperGrains Blueberry Pecan and 3 tablespoons of coconut oil. 
-Once the mixture is finely ground, place the courts mixture in a mini tart pan or the cap of a mason jar. Place in the refrigerator for 15 minutes to allow the crust to set. 
- While you are waiting for the crust, take out a small saucepan add the blueberries, sugar, lemon juice and some water. Bring the blueberries to a simmer on low-medium heat. 
- Once the crust is ready, place on  plate adds plain yogurt, drizzle of honey and some of the blueberries.

Last week, I got a box with several recipes to try out. The cool thing about Hello Fresh is getting try out  interesting yet simple to make dishes. When I opened my box, I was greeted with boxes that were labeled with the type of Dish. Each box is filled with fresh produce, seasonings, and anything to help you create your dish. I was surprised that I did not need to go to the grocery store, all of the pre-measured ingredients were provided. The first dish that could not wait to start making was Jamie's Mega Mushroom & Lentil Curry with Tomato, Cilantro & Lemony Rice.
