Eat better in a hurry | Sprouts Farmers Market

If you can't tell already from my past two blog posts, I am all about eating better in a hurry. When I am making healthier choices, I have more energy and can maintain a good exercise routine when I am consuming the right nutrients. I am the biggest snacker ever. I love snacking and feel like I need a quick energy boost throughout the day in between lunch and dinner meals. I head to my local Sprouts Farmers Market to eat better in a hurry because it carries high-quality food at great prices. I picked some of my favorite snacks to keep in my work bag and to get me through the day. Tabouli | Mediterranean-style salad

The past month I have been busy and falling off a healthy diet, so recently I have been trying to find quick and healthy dishes to make.  Salads that are packed with raw veggies, nuts, and a simple dressing are my favorites. They are easy to make, filling, healthy and great for lunch or dinner. My last post, I shared a delicious Herb Shrimp Salad and it is one of the easiest and flavorful salads to make that is perfect for dinner on those busy days. For today's dish, I am taking it middle eastern with one my favorite salad good for you salads, Tabouli. Tabouli is a Mediterranean-style salad that is made with a lot of parsley, finely chopped tomatoes, onions, cucumber, wheat bulgur and a simple lemon olive oil dressing. This salad is filling because of the bulgur wheat, which is a whole wheat grain that has been cracked and partially pre-cooked. You can replace the bulgur wheat with quinoa or couscous. But I do prefer using bulgur wheat for the traditional Tabouli. Also, traditional Tabouli salad everything is very finely chopped. Mine is little larger. Since this salad contains an acidic dressing, it is perfectly paired with rich meals. 

Without further ado, let us get into how to make Tabouli, a Mediterranean-style salad.  

Ingredients: Tabouli Salad

- 1 cup of bulgur wheat
- 1/2 cup finely chopped tomatoes 
- 1/2 an onion, minced 
- 2 cups  of finely chopped parsley 
- 4 tablespoons of lemon juice 
- 4 tablespoon of olive oil 
- Salt and Pepper
- 1 large garlic clove, minced 
- Half a cucumber finely chopped (optional) 


-  Place the 1 cup fo bulgur wheat in a bowl and pour about 2 cups of boiling water and let it sit for 10 minutes.

- Once the bulgur absorbed the liquid, drain any reaming liquid and transfer to a large bowl.

- Add the chopped parsley, tomatoes, onions, cucumber and mix well.

- In a separate bowl, add olive oil, lemon juice, minced garlic salt, and pepper.

- Pour the dressing and mix well. Taste the tabouli and if you feel that it needs more oil, lemon juice
or salt add as needed.

- Add sliced avocados on top, optional

That is it! 
I know, really easy like under 20 minutes easy. Enjoy this Tabouli Mediterranean-style salad that is packed with vitamin C, K, A, magnesium, fiber, iron and many other nutrients
